How to make
Preheat oven to 180°C, 350°F or gas mark 4.

Roll into small balls and place on lined baking tray allowing room to spread. Do not flatten the balls.

• Cumin seeds 1 teaspoon
• Turmeric paste 1/4 teaspoon

• Dried mango powder 1 teaspoon
• Garam masala powder 1/2 teaspoon

• Fresh coriander leaves,finely chopped 2-3 tablespoons

Method
Soak soya granules for 15 minutes in sufficient water. Drain and squeeze out excess water with your hands. Heat 1 tbsp oil in a non-stick pan, add cumin seeds, turmeric powder and coriander powder and mix.
Add soya granules, green chilli paste, amchur, garam masala powder, salt and sauté. Add coriander leaves and mix. Transfer the mixture onto a plate and set aside to cool.

Combine the broccoli stalks and 2½ cups of water in a microwave safe bowl and microwave on high for 5 minutes, stirring once in between after 3 minutes.
Add the broccoli florets, onions, celery and garlic, mix well and microwave on high for 12 minutes, stirring every 2 minutes. Keep aside to cool.
Blend it in a mixer to a smooth purée.
Transfer it to a microwave safe bowl and microwave on high for 3 minutes, stirring once in between after 1½ minutes.
Add the cornflour-milk mixture, salt, pepper and almonds and microwave on high for 5 minutes, stirring once in between after 2½ minutes.

For The Stuffing
1 tbsp oil
1/2 tsp cumin seeds (jeera)
2 cups boiled , peeled and mashed potatoes
1 tsp ginger-green chilli paste
salt to taste
1 1/2 tsp dried mango powder (amchur)
1 tsp chilli powder
1/2 cup boiled green peas
2 tbsp finely chopped coriander (dhania)
Method
For the dough
Combine all the ingredients together in a bowl and add enough water to make a firm dough. Keep aside covered for 15 minutes.
Knead again using oil til smooth. Keep aside covered with a wet muslin cloth.
Divide the dough into 4 equal portions and roll out each portion into 150 mm. (6") diameter thin chapatis.
Cook on a tava (griddle) till light brown spots appear on both sides. Keep aside.
For the stuffing
Heat the oil in a pan and add the cumin seeds. When the seeds crackle, add the potatoes and sauté for 2 minutes.

Boil the tomatoes with the moong dal in 3 to 4 cups of water till cooked.
Blend in a blender and strain.

Oil for shallow frying
How to make cheese egg roll:
Mix all the ingredients (except bread and oil) together in a bowl.
Layer bread quarters with the egg-cheese mixture and keep aside.
Heat oil in a frying pan, carefully slide in the layered bread quarters (mixture side down) into the hot oil. Fry for 2-3 minutes, then turn over to other side. Fry until golden brown on either side.
